Ingredients

  • Bell peppers – 4 large, any color
  • Ground beef (or turkey) – 1 pound
  • Cooked rice – 1 cup
  • Olive oil – 2 tablespoons
  • Onion (finely chopped) – 1 small
  • Garlic (minced) – 2 cloves
  • Tomato sauce – 1 cup
  • Diced tomatoes (with juice) – ½ cup
  • Cumin (ground) – 1 teaspoon
  • Smoked paprika – 1 teaspoon
  • Chili powder – ½ teaspoon
  • Fresh parsley (chopped) – 2 tablespoons
  • Cheddar or Monterey Jack cheese (shredded) – 1 cup
  • Salt and black pepper – To taste

Instructions

  • Preheat the oven – Set the oven to 375°F (190°C) and grease a baking dish.
  • Prepare the bell peppers – Cut the tops off, remove seeds, and lightly brush with olive oil.
  • Sauté the aromatics – Heat olive oil in a skillet, then sauté onions and garlic until fragrant.
  • Cook the meat – Add ground beef (or turkey) and cook until browned, breaking it apart with a spoon.
  • Mix the filling – Stir in cooked rice, diced tomatoes, tomato sauce, and spices, letting it simmer for 5 minutes.
  • Stuff the peppers – Spoon the filling into each bell pepper, pressing down gently.
  • Top with cheese – Sprinkle shredded cheese over each stuffed pepper for a melty finish.
  • Bake until tender – Cover with foil and bake for 30 minutes, then uncover and bake for another 10 minutes.
