This is a savory meatloaf recipe crafted with ground turkey instead of traditional beef. It features a blend of breadcrumbs, sautéed onions, garlic, and herbs to add moisture and flavor, topped with Bobby Flay’s signature chipotle ketchup glaze. The result is a juicy, robust meatloaf with a balance of spice and sweetness.

Ingredients

  • Ground turkey (preferably dark meat) – 2 pounds

  • Breadcrumbs (plain or panko) – ¾ cup

  • Milk – ½ cup

  • Eggs – 2 large

  • Onion (finely chopped) – 1 medium

  • Garlic (minced) – 2 cloves

  • Red bell pepper (finely diced) – ½ cup

  • Fresh parsley (chopped) – 2 tablespoons

  • Salt – 1 teaspoon

  • Black pepper – ½ teaspoon

  • Olive oil – 1 tablespoon

For the Chipotle Ketchup Glaze:

  • Ketchup – ½ cup

  • Chipotle in adobo (minced) – 1 tablespoon

  • Brown sugar – 1 tablespoon

  • Apple cider vinegar – 1 tablespoon

Instructions

  • Preheat oven to 375°F (190°C) – Line a baking sheet or grease a loaf pan.

  • Sauté vegetables – Heat olive oil in a pan, cook onion, garlic, and red bell pepper until soft. Cool slightly.

  • Mix the meatloaf base – In a large bowl, combine breadcrumbs and milk. Let sit for 2 minutes. Then add eggs, sautéed vegetables, ground turkey, parsley, salt, and pepper. Mix gently until just combined.

  • Form the loaf – Shape mixture into a loaf on a baking sheet or pack into a loaf pan.

  • Prepare glaze – In a small bowl, mix ketchup, chipotle, brown sugar, and vinegar.

  • Glaze and bake – Brush half of the glaze over the loaf. Bake for 45 minutes, then add remaining glaze and bake another 15–20 minutes, or until internal temp reaches 165°F (74°C).

  • Rest before slicing – Let meatloaf rest for 10 minutes before cutting.
