Ground beef (80/20) – 1½ pounds
Ground turkey(optional) – ½ pound
Italian-style breadcrumbs – ¾ cup
Milk – ½ cup
Eggs – 2 large
Onion (finely chopped) – 1 medium
Garlic (minced) – 2 cloves
Parmesan cheese (grated) – ½ cup
Mozzarella cheese (cubed or shredded) – 1 cup
Dried oregano – 1 teaspoon
Dried basil – 1 teaspoon
Crushed red pepper flakes – ¼ teaspoon (optional)
Salt – 1 teaspoon
Black pepper – ½ teaspoon
Olive oil – 1 tablespoon
Marinara sauce – 1 cup (plus more for serving)
Preheat oven to 375°F (190°C) – Prepare a baking sheet or loaf pan.
Sauté aromatics – Heat olive oil, cook onion and garlic until soft. Let cool slightly.
Soak breadcrumbs – Mix breadcrumbs and milk in a large bowl and let sit for 2–3 minutes.
Mix the meatloaf – Add eggs, sautéed vegetables, ground beef and turkey, Parmesan, oregano, basil, red pepper flakes, salt, and pepper. Mix until just combined.
Add mozzarella center – Press half the meat mixture into the pan, layer mozzarella in the center, then cover with the rest of the meat.
Top with marinara – Spread ½ cup marinara sauce over the top.
Bake for 50–60 minutes – Internal temp should reach 160°F (71°C).
Rest and serve – Let sit for 10 minutes. Slice and serve with extra warmed marinara.
